Easy-Breezy Kombucha Brew: A Refreshing Blend of Green Tea, Lime, and Honey

Here's a cracking recipe for a green tea, lime, and honey kombucha that'll quench your thirst like a tangy, bubbly mojito.

We've swapped out black tea for the more delicate and herbaceous green tea in this kombucha brew, creating a unique twist on the classic drink. To top it off, we've added limes and honey for a zesty, thirst-quenching lime lemonade vibe.

This recipe makes a whopping 3 liters of delectable green tea, lime, and honey kombucha.

Green Tea, Lime & Honey Kombucha Recipe

Preparation Time

Ingredients

  • 1 kombucha SCOBY and its liquid culture (about 350 ml)
  • 12 g green tea (1 tsp. for the second fermentation; optional)
  • 200 g sugar
  • 2.5 L chlorine-free or filtered water
  • 1/4 cup honey
  • 4 limes

Equipment

  • Wide-mouthed jar (approximately 4 liters or 1 gallon)
  • Cloth cover and rubber band to seal the jar opening

Instructions

Brewing and fermentation

  1. Fill a jar with 500 ml of boiling water.
  2. Tip in the sugar and stir until fully dissolved.
  3. Top up the water to reach 3 liters (the tea is now lukewarm).
  4. Plop in the kombucha SCOBY and its liquid starter culture.
  5. Seal the jar with a cloth and an elastic band.
  6. Let it brew for 10-15 days at room temperature.

Adding flavor

  1. Chuck in the honey and mix until dissolved.
  2. Wash the limes well. Quarter the limes, then squeeze out the juice using a juicer. Add the juice, the rind pieces, and (optional) a tsp. of green tea for a more intense green tea flavor.
  3. Do a quick cold infusion of the green tea if you're after a stronger green tea flavor. Mix well.
  4. Cover the jar with a lid and pop it in the fridge overnight.
  5. Filter the kombucha using a sieve or a cloth filter to remove the limes, rind pieces, and green tea leaves.
  6. Store the filtered kombucha in pressure-resistant bottles, then leave it at room temperature for 2-3 days.
  7. For even more carbonation, leave it for 1-2 more days.

When's My Kombucha Ready?

As the kombucha ferments, it transforms from sweet to acidic. The required time may fluctuate based on taste, ingredients, and temperature. Your kombucha is prepared for flavoring when it tickles your taste buds.

  1. Starting on day 5, give the kombucha a taste. Test it every 1-2 days.
  2. When the kombucha reaches your desired level of tanginess, remove the SCOBY and store it in a cool place, covered, in an airtight container. Add about 2 cups of the freshly brewed kombucha to it. Pop this SCOBY and starter culture in the fridge, ready to brew your next kombucha recipe!

Chill when the kombucha has enough fizz (be careful with pressure).
