In a recent update, Centr trainer Ingrid Clay has shared her post-workout meal and snack recommendations, offering a healthy and easy-to-make veggie baked sweet potato chili and eight-ingredient protein bites for a sweet snack on the go.
For those looking for a hearty post-workout meal, Clay suggests a veggie baked sweet potato chili. This eight-ingredient recipe involves preheating an oven, lining a baking tray with baking paper, peeling and cubing three medium-sized sweet potatoes, tossing them in olive oil, and baking for 15-20 minutes. While the sweet potatoes are baking, combine black beans, lentils, frozen peas or sweetcorn, diced tomatoes, red onion, capsicum, vegetable stock, garlic clove, Mexican spice mix, salt, pepper, and the roasted sweet potatoes in a large bowl. Place the mixture in a baking tray, cover with foil, and bake for a further 20-25 minutes. Clay sometimes adds her own plant-based touches and flourishes to the recipe.
